PISA: Typical products of the province of Pisa are the FEGATELLO di MAIALE PISANO derived from the pig and the MALLEGATO PISANO, a pancake derived from the pig's blood. Delicious is also the PECORINO DELLE BALZE VOLTERRANE, a cheese of the Volterra area and the WHITE TRUFFLE of San Miniato.The town of Lari is famous for the cherries (there are 19 varieties!)
